Looking for excellent anime series

I am looking for a new anime series to watch. Due to the overwhelming amounts of series ranging from lackluster to abysmal this is an understandably cumbersome task.

I imagine that it's safe to presume that active users of an anime forum will be more knowledgable of series than I am.

Series that I have seen, and enjoyed:
Fullmetal Alchemist
Berserk
Trigun
Gantz
Claymore
Death Note
Hellsing
Elfen Lied
Monster

Series that I have seen and did not enjoy:
Naruto
Bleach
Coybow Bebop
Neon Genesis Evangelion
Gungrave

I of course have seen Dragon Ball Z/GT which were great when I was a child; not so much anymore.

Basically I am looking for any genre of anime which fits the aforementioned "enjoyed" list. I despise any childish anime which is essentially the stereotypical view of what anime is (ie: Lucky Star).
Length of the series isn't really relevant; I'd prefer something that isn't like 300 episodes though.

I recommend these:

Higurashi No Naku Koro Ni - Really dark and twisted, will seem kiddy for the first episode or so, but it's far from it.

Higurashi No Naku Koro Ni Kai - Second series for Higurashi.

Darker than Black - This one would probably fit your style the best, it's just amazing.

Trinity Blood - Vampire themed anime.

Fushigi Yuugi - I didn't really see anything on either list to relate this to, but It's a more "grown-up" romance, even has some sex scenes.

Shingetsutan Tsukihime - Yet another dark vampire themed anime.

Chrno Crusade - Personal favorite.

Darker than Black is a great series has a great story and it seems like you enjoy more of a serious themes show. You have seen Monster already so really its hard to have a fair comparison on a lot anime considering how amazing it it.
Also if you enjoyed Berserk you may want to check out Fist of the North Star.
