I like those forms:
Ichigo's Zangetsu in both Shikai and Hollow's Shikai form ( white and black forms )
Byakuya's Senbonzakura ( powerfull, 360 degree attacks )
Ikkaku's Hōzukimaru ( just cool )

I think the zanpakuto I love the best is Wabisuke (Kira's) I just think it is perfect in how it works, and also I love the philosophy behind how Wabisuke works :)

I also love Shunsei's and Ayasegawa's (only his 'true' shikai - how freaking badass is it though ;))
