Coddle looks good. I wish I had a kitchen to cook it in. One evening in Costa Rica I got lost down a muddy trail and ended up in an absolutely surreal scene. Emerging from the dense jungle I found myself in a grassy clearing. A small bridge led across a pond to some raised wood platforms with thatched palm roofs, no walls. Oil fueled torches provided a flickering illumination. This was apparently a restaurant, as a Spanish or maybe Italian chef greeted me in broken English and insisted I have something to eat. He made the most delicious pasta I have ever had. Describing it can not possibly impart a sense of how great this food was. Were I unable to find the place a second time I would have been certain it was all a dream. |
