He would still die eventually. Let face it, Ryuk told him right at the beginning that he will eventually kill Light. And the sole reason why Ryuk visit Earth was because he is bored. Even once Light win and rule Earth as a God, Ryuk will eventually kill him because it's not amusing him anymore. After all, as a bored Shinigami, do you find interesting to watch a Human God rule a peaceful planet? That would even be a more boring ending imo.
