Itachi, I think is is well-liked because he is a serious bad-ass for all the right reasons. I mean, I don't approve of him massacring his entire family the way that he did, but apparently it was necessary in the eyes of the third Hokage.

I just like the fact that he cares about his worthless brother, and he loved him too much to actually kill him.

there was a Itachi FC some time ago, so i thinks a lot of people like him
like @Yoko said, we may not approve with what he has done, but he had its reason, hed a badass, but not a jerk or infatuated but his own power (like we know who is)
from the begging he was calm, kicked ass and made a evil guy on the spot, the murdered of the uchiha clan, still people liked him, that mostly cause we like the bad guy more than the good guy, still we found out later why he did what he did

I think all around though, he's one of those absolutely necessary characters that you need to throw the plot. He's complex, (even more so than b* Sasugay) and he strives for his goals knowing that he's going to win. It's too bad that on the outside, Sasugay became everything he wanted to become, but not only did he cheat by stealing Itachi's eyes, but he's missing the key elements that Itachi wanted him to have. >.>
